Mustard Chicken Remix

Cook an easy dinner tonight, remix to create a new meal to have later.

I make a chicken dish that my family calls “Mustard Chicken”. It’s a fairly easy thing to throw together and then just bake it!

Place boneless chicken breasts in an oven proof dish. Make sure you make more chicken than your family will eat in one sitting. Place slices of ham on top of each. Mix about a cup of mayonnaise, ¾ cup mustard, 1-2 cups shredded cheese. Then plop some of that yummy goodness on each chicken breast. Top with more shredded cheese, if desired. Bake at 350 for about 45 minutes. Take the extra chicken out before serving. Serve over egg noodles. (Make extra egg noodles, too) Add a nice tossed salad.

Chicken Cordon Bleu Casserole

Then while cleaning up after eating (or when you have time later that night or the next day or so), cut chicken and ham slices into bite sized pieces. Mix with the saucy goodness and extra egg noodles. Add more ham and/or cheese if desired. Serve later in the week or freeze in a foil pan.
