On the fourth day of Christmas…

Your tip of the day is 4 ways that I like to use leftover chicken. In fact, I love these ideas so much that sometimes I cook chicken breasts because I want to have some to use for these ideas.

  1. Chicken Salad – Yes, I know, this isn’t anything earth shattering. However, this is a twist on the traditional chicken salad recipe. This is how I make my chicken salad. First of all, I like to shred or chop the chicken very fine. Another way I make it different is by adding lots of dill, a little seedless raspberry jam and enough mayo to get it to your desired consistency. Delicious!
  2. Buffalo Chicken Dip – This is a favorite in our family. Mix leftover, shredded chicken with softened cream cheese, ranch dressing, shredded cheese and buffalo wing sauce. Spread in pie plate. Top with more shredded cheese and heat until warm and cheese is melted. Serve with celery, crackers, tortilla chips, etc.
  3. Buffalo Chicken Pasta – Using the buffalo chicken dip, add some ranch dressing and/or milk to thin it and then add to cooked pasta. Serve as is or place in casserole and top with more shredded cheese and bake.
  4. Chicken crescent ring – You can also use the chicken salad or buffalo chicken dip. Lay refrigerated crescent rolls in a circle with widest parts in the middle. Spoon chicken mixture onto the crescent rolls. Fold the points over and bake for 25 minutes at 375.
